Keto Chicken Spinach Artichoke Dip Casserole

The other day I was sitting there staring down a package of chicken breasts willing them to cook themselves. I'm kidding, kind of. But, you know food ruts are real and sometimes this momma just doesn't want to make the same thing one more time. So, I came up with this idea to combine Spinach Artichoke Dip with Chicken.


Keto Chicken Spinach Artichoke Dip Casserole

8 servings/3 net carbs per serving

1 lb chicken breast, diced
12 oz marinated artichoke hearts, chopped
10 oz chopped spinach
1 c. diced zucchini
1/2 c. sour cream
1/2 c. mayo
8 oz cream cheese
1 c. mozzarella (+more to sprinkle on top)
1/4 c. parmesan cheese


  • Preheat oven to 375 degrees.
  • Cook chicken until browned on all sides but not completely cooked through. 
  • Cook spinach in microwave until softened then squeeze all juice out.
  • Add chicken, spinach, chopped artichoke hearts, and zucchini to a 9x13 pan. 
  • Soften cream cheese then add with mayo, sour cream,parmesan,  and mozzarella to a bowl. Mix until combined. Add salt and pepper to taste.
  • Combine with the chicken mixture. 
  • Sprinkle more mozzarella on top before baking. 
  • Bake for 30 minutes or until done.


This is a creamy, filling meal. If you like Spinach Artichoke Dip you will love this one. We certainly did! The numbers change depending on the ingredient brands you use and the amount of mozzarella you put on the top. My numbers are below.

So, are you drooling yet? I tried to include some traditional cookies (to me) and some that I had never seen before. My friend and I were talking about Rice Krispie treats the other day. They are her favorite and I can't remember the last time I tried to make them. So, I think first up on my list of treats to try is the Reindeer Rice Krispies. They are so stinkin' cute and I bet they taste delicious too. What is the first thing you will be making? Oh and don't forget to go and leave love for the people who originally shared these!



Recipe of the Week: Chicken Artichoke Lasagna


Let's be honest for a moment...I love lasagna. I'm kind of like Garfield in that regard. Okay, so I don't eat a ton of frozen lasagna but I would if I had to! Thankfully, I don't have to be that extreme because I have recipes like this one in my back pocket. I had some ground chicken out, started cooking it, and these wild flavor combinations started flying out at me. Let me preface this by saying I adore artichokes. Mmm. Oh, and I made this gluten free by using gluten-free lasagna noodles but you could use thinly sliced zucchini as well. My mouth is actually watering right now. Pitiful. Anyway, here is my recipe. I hope you enjoy it too!

Ingredients:

1 lb. ground chicken
1/2 onion, chopped
1 can quartered artichoke hearts
a handful of frozen chopped spinach
half a package of sun-dried tomatoes 
1 jar marinara sauce
1 package gluten-free lasagna noodles
1 tsp italian seasoning
1 tsp garlic powder
salt and pepper to taste
16 oz. ricotta cheese
1 egg, beaten
2 c. mozzarella cheese

Directions: 

Preheat oven to 375 degrees.
Cook noodles and then place in a bowl of cold water to stop the cooking and keep them separated.

In a large skillet, brown the ground chicken with the chopped onion. Add the seasonings, the artichoke hearts, and the handful of frozen chopped spinach.

Put the sun-dried tomatoes in a small bowl with some hot water and let them sit for a while until soft. Chop them and add to the meat mixture. Add the jar of marinara to the meat mixture as well.
Combine the ricotta cheese, 1 egg, and about 1/2 cup of mozzarella cheese in a bowl.




Layer the lasagna in a 9x13 pan starting with a small amount of meat/sauce mixture, followed by noodles. Add the meat mixture, topping it with the cheese mixture.
Next add more noodles and repeat layers.



On top, put the remaining cheese (or however much you prefer).
Cover pan with foil and put into preheated oven. Bake for approximately 45 minutes.
Remove foil and place back in oven until the cheese is browned to your liking.

Easy Spaghetti Pie


Have you ever heard of spaghetti pie? It is delicious and simple but what if you have even less time than you need to make it? You cheat! Haha, here is my shortcut extra easy spaghetti pie.

The original recipe I use calls for eggs and parmesan cheese to be mixed with the cooked noodles. Then you layer the cheese mixture with the meat sauce and bake it until bubbly.

This "recipe" is even easier, if you can believe it. I hesitate to call it a recipe because it was so easy. I'm not even going to give you a complete list of quantities since I used leftovers to create it. 

Here are the ingredients I used.

1/2 package of cooked Spaghetti
1 package of Meatballs (or homemade)
1 jar of Marinara sauce (or homemade)
1 container of Cottage cheese
1 tsp. Italian seasoning
1/2 cup Mozzarella cheese
Parmesan cheese, to taste
Salt & Pepper, to taste

I simply placed the pasta in the bottom of the bowl with seasoned cottage cheese next. On top of that I put the sauce with meatballs in it. I popped it in the microwave to heat it through. Then I topped it with parmesan and mozzarella cheeses, but you could also use a oven safe dish to heat it all up and melt the cheese. 

It was delicious and not too far from the original with less effort.
